Recipe Ingredients for Buffalo wing blue cheese meat loaf

1 Olive Oil Spray
2/3 cup rolled oats
1/2 cup 1% milk
2 1/2 tbsp barbeque sauce
1 pound ground chicken
1/2 cup celery
1/4 cup carrot
1/4 onion
2 large eggs
1/4 tsp. salt
1/4 cup blue cheese dressing

Recipe Directions for Buffalo wing blue cheese meat loaf

  1. Preheat the oven to 350 degrees. Lightly mist a 9x5 loaf pan with olive oil spray.

  2. Combine the oats and milk in a medium mixing bowl and stir to mix. Let stand

  3. for 3 minutes, or until the oats begin to soften. Stir in the wing sauce until well

  4. mixed. Add the chicken, celery, carrot, onion, egg whites and salt. With a fork or

  5. clean hands, mix the ingredients well. Add the blue cheese and gently mix to combine.

  6. Transfer the mixture to the prepared pan and spread so that the top is flat. Bake

  7. for 35 to 40 minutes, or until the chicken is completely cooked through and no

  8. longer pink. Cut into 8 slices and serve immediately.

  9. *edited to add - I baked the meatloaf ahead of time and then I grilled it.
