Meatballs made with Buffalo. Also add 1/2 cup chopped parsley if you like. Can make the meatballs with other types of ground meat as well.

Recipe Ingredients for Buffalo meatballs

1 pound ground buffalo
1/2 cup oatmeal
1/4 cup walnuts
1 egg
1 cup onion, chopped
3 tbsp ketchup
1 clove garlic
3 tbsp olive oil
1/8 cup carrots, chopped
1/8 cup celery, chopped
3 tomatoes, chopped

Recipe Directions for Buffalo meatballs

  1. Mix together buffalo, oatmeal, chopped walnuts, egg, onion, ketchup, chopped garlic together in a large bowl. Do not overmix.

  2. Heat oil in a large skillet over medium heat. Shape the meatballs (whatever size you like), and brown on all sides. When browned, add pureed fresh tomatoes as well as a jar of your favorite tomato/spaghetti sauce. (Not included in recipe calorie count).

  3. Simmer over medium-low heat for 1/2 hour or longer.

  4. serve with spaghetti.
