Nutritious High Protein/High Carbohydrate meal

Recipe Ingredients for Buffalo Chili

8 oz lean ground beef
2 medium green peppers
1/2 medium onion
1 tbsp canola oil
56 oz canned diced Tomatoes
7 oz canned yellow corn
3 1/2 oz dry Kidney beans
3 1/2 oz dry black beans
3 jalapeno pepper
1 cup water

Recipe Directions for Buffalo Chili

  1. 1. Combine 1/2 cup of kidney dry beans and 1/2 cup dry black beans and submerge in water. Bring water to a boiling point. Reduce heat to a low-medium heat (still boiling) and simmer for about 2 hours (ALTERNATIVE: submerge dry beans for 8 hours and boil for an hour, or use 15 oz each of canned beans rinsed)

  2. 2. Heat a pan with canola oil on medium high heat. Add peppers and onions. Brown until peppers are cooked and onions are translucent. Add buffalo meat and cook until browned, while cooking season with salt , pepper and paprika (additional spices is needed). When cooking is complete, add water, beans, drained yellow corn, and tomatoes. Bring to a boil for 30 additional minutes. Serve
