Recipe Ingredients for Buffalo Chicken Salad

1 pounds chicken breast halves, skinless, boneless
2 tablespoon hot sauce, such as cayanne pepper hot sauce, can also add more to taste
2 teaspoon olive oil
8 cups romaine lettuce, cut into 1-inch-wide strips
4 stalks celery, thinly sliced
2 medium carrots, coarsely grated
2 scallion, thinly sliced (green part only)
1/2 cup Wishbone light ranch dressing

Recipe Directions for Buffalo Chicken Salad

  1. Preparation

  2. Preheat the broiler.

  3. Put the chicken between two sheets of waxed paper and pound with a mallet or hammer to an even thickness of about 3/4 inch, then cut the chicken crosswise into 1/2-inch-thick strips.

  4. In a large bowl, combine the hot sauce and oil, add the chicken, and toss until it is well coated. Arrange the chicken on a baking sheet and broil until it is cooked through, 4 to 6 minutes total, turning once. In a large bowl, combine the Romaine, celery, carrots, and scallions and toss with the dressing. Divide the greens between 4 plates and top with the warm chicken. Serve with extra hot sauce on the side.

  5. Serving size: about 2 cups of salad, 5 strips of chicken, 2 tablespoons dressing.
