Recipe Ingredients for Buffalo Chicken Salad

2 chicken breast, boneless and skinless
4 t hot sauce, like tobasco
2 t olive oil
6 c romaine lettuce, chopped
4 stalks celery, thinly sliced
2 med carrots
2 green onions
2 T blue cheese, crumbled

Recipe Directions for Buffalo Chicken Salad

  1. If using fresh chicken, turn the broiler on to preheat whlle you're preparing ingredients.

  2. Cut chicken breasts into 1" strips.

  3. Combine hot sauce and oil in a large bowl. Add the chicken, toss with your hands until coated, then place the chicken on a baking sheet and broil for about 2 minutes on each side. (Cut through to check for doneness)

  4. Pile veggies into two large bowls. Place warm chicken on top. Drizzle dressing over the top, add crumbled blue cheese and extra hot sauce, if you wish.
