Recipe Ingredients for Buffalo-Chicken Macaroni & Cheese

4 tbsp margarine
1 pound macaroni
1 small onion, chopped
2 stalks celery, finely chopped
3 cups chicken, shredded
2 cloves garlic, minced
3/4 cup hot sauce
2 tbsp flour
2 tsp dry mustard
2 1/2 cups fat free evaporated milk
3 1/2 cups shredded 2% cheddar cheese
2 cups mozzarella
2/3 cup fat free sour cream
1 cup bread crumbs
1/2 cup blue cheese, crumbled

Recipe Directions for Buffalo-Chicken Macaroni & Cheese

  1. Preheat oven to 350; butter a 9x13 baking dish.

  2. Cook macaroni according to pkg directions.

  3. Sautee onion & celery until soft, about 5 min. Stir in cooked chicken & garlic, cook 2 minutes; add 1/2 cup hot sauce and simmer until thickened, about 1 min.

  4. Melt 2 Tbsp marg in a saucepan over med heat. Stir in flour & mustard until smooth. Whisk in evaporated milk, then add remaining 1/2 cup hot sauce; stir until thick, about 2 min. Whisk in the cheddar & pepper jack, then whisk in the sour cream until smooth.

  5. Spread 1/2 the macaroni in the baking dish, then top with chicken mixture and the remaining macaroni. Pour the cheese sauce evenly over the top.

  6. Melt the remaining 2 Tbsp marg in microwave; stir in the bread crumbs & blue cheese. Sprinkle over the macaroni and bake until bubbly, 30-40 min. Let rest 10 min before serving.
