Bud's Salsa w/Chickpeas & Red Beans

Recipe Ingredients for Bud's Salsa

15 1/2 oz chickpeas, rinsed and drained
15 1/2 oz red beans
1 c tomatoes, chopped
1 red onion, diced
2 T lime juice
3 T olive oil
1 T red wine vinegar
1/4 t garlic powder
1/4 t oregano
1 t salt
1/2 t pepper

Recipe Directions for Bud's Salsa

  1. In a large bowl, mix together chickpeas, red beans, tomatoes and red onion.

  2. In a small bowl, whisk together lime juice, olive oil, red wine vinegar, garlic powder, oregano, salt and pepper.

  3. Add dressing to the chickpeas mixture. Cover bowl and chill at least one hour.

  4. May be served as side dish or with chips as a dip.
