Recipe Ingredients for Buddha's Delight with Tofu, Broccoli, and Water Chestnuts

2 tablespoons low-sodium soy sauce
2 teaspoons dark sesame oil
2 teaspoons rice vinegar
1 teaspoon agave syrup (nectar)
10 oz firm tofu (pressed and drained)
5 cups broccoli florets (small)
1 1/2 cups (1/4 - inch) carrots, diagonally sliced
1/2 cup broccoli stems, peeled and chopped
1 tablespoon canola oil
1 1/2 cups green onions (sliced)
1 tablespoon ginger (fresh, peeled, grated)
2 garlic cloves, minced
1 cup snow peas, trimmed
4 oz water chestnuts, sliced
1/2 cup vegetable broth (or chick.)
2 teaspoons cornstarch (sub. glucomannan powder)
1/4 teaspoon salt

Recipe Directions for Buddha's Delight with Tofu, Broccoli, and Water Chestnuts

  1. Combine first 5 ingredients, tossing to coat.

  2. Cover and marinate in refrigerator 1 hour.

  3. Drain in a colander over a bowl, reserving marinade.

  4. Cook broccoli florets, carrot, and broccoli stems in boiling water 1 1/2 minutes; drain. Plunge into ice water. Drain.

  5. Heat canola oil in a wok or large nonstick skillet over medium-high heat.

  6. Add tofu; stir-fry 5 minutes or until lightly browned on all sides.

  7. Stir in onions, ginger, and garlic; stir-fry 30 seconds.

  8. Stir in broccoli mixture, snow peas, and water chestnuts; stir-fry 1 minute.

  9. Combine broth (you can sub. chicken broth, if you so desire here) and cornstarch, stirring with a whisk.

  10. Add cornstarch mixture, reserved marinade, and salt to the pan.

  11. Bring to a boil.

  12. Cook 2 1/2 minutes or until slightly thick, stirring constantly. Serve over rice (if you so desire.).
