A hearty and healthful pancake. Experiment with the ratio of buckwheat to whole wheat. You can go all buckwheat if you'd like for an even heartier, sweeter taste.

Recipe Ingredients for Buckwheat and Whole Wheat Pancakes

1/2 cup Whole Wheat flour
1/2 cup Buckwheat flour
2 tablespoons Brown sugar
1/4 teaspoon baking powder
1/4 teaspoon baking soda
1/2 teaspoon salt
1 cup almond milk
1 tablespoon Extra Virgin Olive Oil
2 egg whites
1/4 teaspoon Cinnamon
1/4 teaspoon Nutmeg
1/4 teaspoon Cardamom
1 tbs. Coconut oil for cooking

Recipe Directions for Buckwheat and Whole Wheat Pancakes

  1. Combine dry ingredients and stir.

  2. Add milk and oil. Stir.

  3. Whip egg whites until fluffy, fold into mixture.

  4. Spoon 1/4 Cup of batter into hot pan, or onto griddle.

  5. Cook until puffed and brown.

  6. Makes 5-7 pancakes depending on size and thickness.

  7. Syrup: I like to water down a teaspoon of honey and heat it. It makes a thin, light syrup that is plenty sweet and a perfect coating to the pancakes. (without being heavy sticky syrup).
