Healthful, sweet, and so much better for you than a bland old scone- yet, as comforting as a scone can get. (adapted from a plain flour scone recipe from SparkPeople user LFARRINGTON84)

Recipe Ingredients for Buckwheat Scones

2 cups Buckwheat flour
1 cup Whole Wheat Flour
1/4 cup Brown Sugar
1/2 teaspoon salt
1 tbs. baking powder
1 teaspoon baking soda
1/4 teaspoon Cinnamon
1/4 teaspoon Nutmeg
1/4 teaspoon Cardamom
1/2 cup almond milk
3 tbs. Coconut oil
1 egg white
1 cup blueberries

Recipe Directions for Buckwheat Scones

  1. Combine dry ingredients.

  2. In a separate bowl, combine wet ingredients (milk, oil and egg white.)

  3. Add wet ingredient mixture and blueberries to dry mixture and stir until just moist.

  4. On a lightly floured surface, knead dough 10 times. Roll dough to 3/4 inch thickness. Cut dough into twelve triangular pieces and transfer to baking sheet.

  5. Bake in oven at 400 degrees for 15-18 minutes or until golden brown. Cool on wire rack and serve warm. Makes 12 servings.
