Recipe Ingredients for Buckwheat Pancakes Studded with Blueberries

1 1/4 cups all-purpose flour
3/4 cup buckwheat flour
1 1/2 tsp baking powder
1 1/2 tsp baking soda
1/4 tsp salt
2 large eggs
2 1/2 cups buttermilk
2 tbsp canola oil
1 cup fresh blueberries

Recipe Directions for Buckwheat Pancakes Studded with Blueberries

  1. In a large bowl, stir together all-purpose and buckwheat flours, baking powder, baking soda and salt. In a small bowl, whisk together eggs, buttermilk and oil until well-blended. Stir egg misture into flour mixture just until blended, then gently fold in blueberries.

  2. Preheat oven to 200F. Heat a 12-inch nonstick frying pan or griddle over medium heat. Coat pan lightly with oil and carefully wipe out with a paper towel. Spoon batter into the pan in 1/3-cup portions and cook until pancakes are browned on the bottom and bubbles form on the surface, about 2 minutes. Flip pancakes and cook until second sides are browned, 1-2 minutes longer. Keep pancakes warm in the oven while you cook remaining batter. Serve warm with butter and maple syrup or blueberry compote.
