Buckwheat Pancakes Recipe

Makes 2 servings



Easy to make from scratch. Makes about 8-10 4" pancakes. If you wish, you can top with butter or margarine and maple syrup.

Recipe Ingredients for Buckwheat Pancakes

1 Egg
1 cup Buttermilk 1% MF
3/4 cup Robin Hood All Purpose Flour
1/4 cup Whole Wheat Flour
1 tsp Sugars, Granulated
1 teaspoon Baking Powder
1/2 tsp Salt, Table
1/2 tsp Baking Soda
4 tsp 100% Pure Canola Oil
1 tsp Vanilla Extract

Recipe Directions for Buckwheat Pancakes

  1. In a medium to large mixing bowl, beat egg with an electric mixer.

  2. Add buttermilk and and mix thoroughly.

  3. Blend in both flours. Add remaining dry ingredients and mix.

  4. Mix in 1 tsp of oil and the vanilla.

  5. Heat skillet until a drop of water skitters in the pan. If it evaporates immediately, the pan is too hot.

  6. Add remaining oil to the pan

  7. Using a large mixing spoon, drop enough batter into pan to form as many 4" circles as your pan will accommodate. (I do 4 at a time)

  8. When bubbles begin to form, carefully slide a ladle under them and flip over, being careful not to touch the other pancakes.

  9. Cook for another 3-4 minutes. Check for doneness by lifting one edge of a pancake and peeking.

  10. Serve immediately.
