Earthy and Robust, buckwheat adds a subtle flavor lacking from regular pancakes. This recipe can be made with either a 1 - 1/2 c buckwheat or 3/4 cup of buckwheat and all-purpose flour.

Recipe Ingredients for Buckwheat pancakes

1 1/2 c buckwheat flour
3 tbsp sugar
1 tsp baking soda
3 tbsp unsalted butter
2 c buttermilk
1 large egg
3 tbs unsalted butter

Recipe Directions for Buckwheat pancakes

  1. Preheat a well-seasoned cast iron pan or hot griddle.

  2. Mix dry ingredients together, then add wet ingredients. Do not overmix.

  3. Pour in desired size over griddle.
