basic buckwheat crepes, or, galettes, as crepes with buckwheat flour instead of regular flour are called - compliments of Clotilde of Chocolate & Zucchini

Recipe Ingredients for Buckwheat Galettes

200 g buckwheat flour
50 g whole wheat flour
2 eggs
2 cups milk
2 cups water

Recipe Directions for Buckwheat Galettes

  1. in a food processor mix flours and eggs until well-blended

  2. add in milk, as much of it as the size of your processor will allow and blend well

  3. pour mixture into a bowl and whisk in any remaining milk and the water

  4. cover and let sit overnight, remove from fridge and let come to room temp one hour prior to making

  5. heat a non-stick pan a little hotter than medium and when it's hot, add a sliver of butter/oil/whatever, then mix up batter the buckwheat flour tends to settle, and pour 1/4 cup into the pan, swirling the pan so the batter coats the bottom

  6. allow to almost cook completely - the edges will look dry and holey, then flip it and allow to cook a few more seconds on the other side

  7. remove from pan and put your choice of topping over it, then fold it up and enjoy!
