Makes 12 servings



2 mini muffins per serving. Buckwheat makes the color more brown than cornmeal color. Yummy. Oil could be substitued with non-fat yogurt, which would lower fat and calorie count.

Recipe Ingredients for Buckwheat cornmeal mini muffins

1 1/2 cups cornmeal
1/2 cup buckwheat flour
2 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
2 tbl Splenda
2 egg whites
1 cup lowfat buttermilk
3 tbl vegetable oil
1 cup whole kernel corn

Recipe Directions for Buckwheat cornmeal mini muffins

Mix dry ingredients in a large bowl. Combine wet ingredients in another bowl and combine with dry. Bake at 400 degrees for about 10 minutes in paper lined mini muffin pans.
