Buckwheat Chicken Casserole Recipe

For some reason the calorie counter program counted the calories in buckwheat flour rather than buckwheat groats (even though the groats are listed in the recipe) so I did some finagling with weight calculations so that it would all come out correctly. You have to use 1.5 cups dry groats...

Recipe Ingredients for Buckwheat chicken casserole

246 g buckwheat groats
2 large eggs
1/4 cup parmesan cheese, grated
1/4 cup cheddar cheese, grated
400 g chicken breast, raw
1 cup onion, chopped
1 cup yogurt
1 tbsp corn oil

Recipe Directions for Buckwheat chicken casserole

  1. Cook the 1.5 cup of groats in 3 cups of boiling water for 20 minutes until all water is absorbed.

  2. In the meantime, saute 1 cup onion and chopped chicken in the oil.

  3. Place half the cooked buckwheat, then the chicken with onion in a pie shell. Then put 1/4 cup cheddar.

  4. Place the rest of the buckwheat mixture.

  5. Beat yogurt and eggs (+salt and pepper) together and pour over our casserole

  6. Spread the 1/4 cup parmesan

  7. Bake at 400 until a crust forms
