Wheat and Buckwheat bread - healthy and delicious!

Recipe Ingredients for Buckwheat Bread

1 cup wheat flour
2 cups buckwheat flour
2 1/2 tsp active dry yeast
1 cup skim milk, lukewarm
2 tablespoons olive oil
1 tablespoon sugar
1 teaspoon salt

Recipe Directions for Buckwheat Bread

  1. Dissolve the yeast with 1/4 cup lukewarm milk

  2. Put sifted flour in a stand mixer bowl.

  3. Dissolve salt, sugar and olive oil with remaining lukewarm milk, and add gently to the flour. Pour in the dissolved yeast mixture.

  4. Knead until the dough is smooth and elastic.

  5. If dough is too soft to be handled, add more flour; ift oo hard, add more milk.

  6. Note that whole wheat doughs may remain slightly sticky. Do not over add extra flour.

  7. Take the dough and place it in a floured or greased bowl, cover with a floured cloth, and let stand in a warm place (80 to 88 degrees F.) at uniform temperature and away from drafts.

  8. Let rise until about double its original bulk and full of bubbles, or until a slight touch of the finger leaves an impression, about 1 1/2 hours. Then the dough is ready for kneading.

  9. Remove dough from bowl and place on a lightly floured surface.

  10. Knead gently for a few minutes. Divide the dough into two equal parts and shape into rectangles that will fit into the prepared pans.

  11. Place the dough in greased and floured pans and allow to rise until doubled in size, approximately 1 hour.

  12. It should be put in a fairly hot oven at first (400 to 425 degrees F.) to allow it to form a crust and then stop rising.

  13. Then, after the first 15 to 20 minutes, decrease the oven temperature to 375 and continue to bake for 15 mimnutes.

  14. The bread should start to brown at the end of the first 20 minutes.

  15. Allow to cool completely on wire racks.
