Recipe Ingredients for Buckwheat Banana Muffins

1 cup flour
1 cup buckwheat flour
1 cup whole wheat flour
1/2 cup walnuts
4 tsp. baking powder
2 tsp. baking soda
2 tsp. vanilla
6 bananas
4 eggs
1/2 cup canola oil
1/4 cup honey
1/4 cup agave syrup

Recipe Directions for Buckwheat Banana Muffins

  1. In small bowl, mix flours, baking powder, baking soda. Break bananas into 1 inch chunks. In food processor or blender, combine bananas, eggs, vanilla, oil and honey; whirl until pureed. Add finely crushed nuts and mix briefly. Pour banana mixture into flour mixture; mix lightly just to blend.

  2. Spoon batter into 21 greased or paper lined muffin cups. Bake in 375 degree oven about 20 minutes. Remove from pan and cool.
