Buckwheat and Wholewheat Flour Pancakes, kind of healthy for a treat day

Recipe Ingredients for Buckwheat American Style Pancakes

3/4 cup organic whole wheat flour
3/4 cup Whole Buckwheat Flour
3 teaspoons organic baking powder
1 teaspoon salt
1 tablespoon organic dark brown sugar
296 g Glenisk Low Fat Organic Milk Correct
116 g Superquinn Organic Eggs Extra Large
2 tbsp Pasture Butter

Recipe Directions for Buckwheat American Style Pancakes

  1. If you have the time in advance, take the milk out of the fridge and allow to come to room temperature. If not see below.

  2. In a large bowl, sift together the flours, baking powder, salt and sugar.

  3. Gently melt butter in a saucepan. If your milk is cold straight from the fridge, heat it very, very slightly too so that it doesn't solidify the butter when they mix.

  4. Separate the egg yolks from the whites. Lightly beat the yolks and mix.

  5. Make a well in the center of the dry mix and pour in the egg and melted butter, and slowly add the milk; mix until smooth but don't over mix.

  6. Beat egg whites until stiff, and gently fold into the batter until fully mixed.

  7. Heat a griddle or non stick frying pan over medium high heat. Once hot enough, turn heat down and add a very small amount of oil. 1/4 tsp should be plenty in a non stick pan.

  8. Pour or scoop the batter onto the griddle, using approximately 1/4 cup for each pancake. Cook slowly so that buckwheat and wheat flours are cooked through, make sure top look dry before turning and lightly brown on both sides.

  9. Serve hot with your favourite toppings. Try non fat quark or greek style yogurt for extra protein, or you can add some protein powder to the batter.

  10. PS; You can bring the calorie count down further by not adding the butter and sugar to the mix.
