Recipe Ingredients for buche de noel cake

4 large eggs
1 cup powdered sugar
2 cups finely ground pecans
1 cup whipping cream
3 tablespoons sugar
2 teaspoons cocoa powder
1 1/5 teaspoon vanilla
4 oz. semi sweet chocolate
2 oz unsalted butter
3 tablespoons light corn syrup
1 oz brandy

Recipe Directions for buche de noel cake

  1. beat egg yolks and powdered sugar until thick and lemony (ribbon stage), fold in nuts and transfer to large bowl. wash mixer thoroughly and dry

  2. beat egg whites until stiff but not dry

  3. fold 1/4 of the egg whites into egg yolk mixture then fold in the rest, being careful not to deflate the whites. spread gently in a buttered pan with buttered and floured waxed paper. bake 13 minutes at 400 degrees. remove wax paper and carefully roll in more paper and cake roll (paper towel roll.) this is when the cake will want to break. this is also best done the day before use. put the cake roll into a plastic bag and chill.

  4. whip the cream, 3 T sugar, cocoa powder, and vanilla until stiff

  5. unroll the cake and fill. place on serving plate and cutoff about 1/3 of teh roll and press angled end of the small piece against teh side of teh original roll to make a log. allow to chill, covered with plastic wrap. then frost with the chocolate glaze. after chilled, make bark marks on it with a fork. decorate with leaves, bows, meringue mushrooms etc. dust with powdered sugar for snow.

  6. to make glaze, heat the remaining ingredients until melted in a double boiler. then allow to cool until thick enough to spread gently over the log. (NOTE this does take a while to cool enough for frosting, but dont just leave it for a long time...it WILL get hard and you will have to remelt it all over again)
