Asian tea beverage with tapioca pearls from About.com. Prep everything a day ahead to allow for things to chill.

Recipe Ingredients for Bubble Tea

3 oz tapioca pearls
18 oz water
4 tbs sugar
2 tbs brown sugar
4 tsp water
4 cups black tea
2 cups milk

Recipe Directions for Bubble Tea

  1. Make tapioca pearls: Boil the water. Add the pearls to the boiling water and boil for 30 minutes. Stir occasionally to make sure the pearls are not sticking to each other or to the pot. Turn off heat and let the pearls steep in the water for another 30 minutes with the lid of the cooking pot on. Drain the tapioca pearls and rinse with cold water to cool them down.

  2. Make sugar syrup: combine sugar and water, heat until sugar is dissolved.

  3. Add cooled pearls to cooled syrup.

  4. Prepare tea and cool.

  5. Combine pearls (in syrup), tea, and milk in a glass.

  6. Serve.
