This recipe is great if you want to use up all the leftover vegetables without making bubble and squeak for the hundredth year running.

Recipe Ingredients for Brussle sprout soup

200 g potatoes
1 medium onion
2 medium leek
500 ml chicken stock
600 g brussels sprouts
150 ml skimmed milk

Recipe Directions for Brussle sprout soup

  1. Spray a saucepan and add the potatoes and the onions. Cover and cook on a gentle heat for 15 minutes, stirring occasionally. Season with salt and pepper.

  2. Add the chicken stock, turn the heat up and cook for a further 10 minutes or until potatoes soften. Add the sprouts to the pan and bring back to the boil.

  3. Liquidise the mixture, adding the milk and cream. Check for seasoning.
