Recipe Ingredients for Brussels Sprouts with Walnut-Lemon Vinaigrette

1 pound Brussels sprouts, trimmed and quartered
2 tbsp walnut oil
1 tbsp shallot, minced
1/4 tsp lemon zest, freshly grated
1 tbsp lemon juice
1 tsp mustard, whole grain style
1/4 tsp salt
1 Freshly ground pepper, to taste

Recipe Directions for Brussels Sprouts with Walnut-Lemon Vinaigrette

  1. Place Brussels sprouts in a steamer basket and steam in a large saucepan over 1 inch of boiling water until tender, 7 to 8 minutes.

  2. Meanwhile, whisk oil, shallot, lemon zest, lemon juice, mustard, salt, and pepper in a medium bowl.

  3. Add the sprouts to the dressing; toss to coat.

  4. Makes 4 servings, about 3/4 cup each.
