Recipe Ingredients for Brussels Sprouts with Roasted Chestnuts

1 1/2 lbs brussels sprouts, trimmed and cut in half
4 slices turkey bacon
1 tbsp butter, divided
3 leeks, thinly sliced (white/light green parts only)
1/4 cup water, divided
1/4 tsp salt
2 tbsp maple syrup
8 oz chestnuts, roasted peeled and quartered
1/4 cup dried cranberries
1/8 tsp pepper
1 1/2 tbsp apple cider vinegar

Recipe Directions for Brussels Sprouts with Roasted Chestnuts

  1. Steam sprouts 5-8 minutes. Cook bacon until brown. Drain and crumble. Melt 2 tsp butter in the same skillet. Add leeks and 3 tbsp of water. Cover and cook about 6 minutes until tender. Add remainint tsp butter to skillet. Add sprouts, remaining tbsp of water, salt and pepper. Cook, stirring until hot and coated. Stir in syrup and vinegar. Toss to coat. Add chestnuts, bacon and cranberries. Toss until well-mixed and heated through.

  2. You can also substitute walnuts or pecans for the chestnuts. To roast fresh chestnuts, cut an 'x' into the shells (which will split when roasted) place on cookie pan & cook at 425 degrees for about 20 minutes. While still warm, carefully peel off shell.
