Brussels Sprouts with Leek and Bacon

Recipe Ingredients for Brussels Sprouts with Leek and Bacon

40 oz brussels sprouts
1/2 cup water
4 strips bacon, cut into 1/4 inch pieces
1 lb leek
2 tbsp olive oil
1 clove garlic, crushed
1 tbsp cider vinegar
1/2 cup parsley, chopped
1/4 tsp salt
1/4 tsp pepper

Recipe Directions for Brussels Sprouts with Leek and Bacon

  1. Trim the rough edges from teh sprouts and cut each in half. In a 12 inch skillet, place sprouts and water and cook on medium heat, 12 minutes or until tender. Drain and transfer into a bowl.

  2. In same skillet add bacon. Cook on medium for 5 to 6 minutes until browned. Transfer bacon onto paper towels to drain keeping skillet on heat.

  3. Add sprouts back to skillet. Add salt and pepper. Cook until sprouts are browned. Remove from pan.

  4. Trim leek. Discard root and dark upper leaves. Cut lengthwise in half, then cross wise into 1/34 inch wide slices. Rinse leek to remove and sand and drain.

  5. Heat olive oil in pan. Add leek, garlic and season with salt and pepper. Cook 12 to 14 minutes, until leek is tender. Add bacon, sprouts and vinegar. Cook 2 minutes longer. Serve with parsley on top.
