I may not have enjoyed Brussels sprouts as a child, but as an adult, I have fallen in love with them! These ?little cabbages? are packed with fiber, Vitamins A, C, and E, and manganese, an antioxidant chemical. Letting the sprouts rest for at least 5 minutes after cutting them allows their health-promoting molecules to become active. Brussels sprouts have been shown to have cholesterol-lowering benefits, as well as cancer-fighting molecules called glucosinolates. Be careful not to overcook Brussels sprouts or they will lose their great texture, nutrients, and taste (as well as start to smell like sulfur).

Recipe Ingredients for Brussels Sprouts with Herb Dressing

4 cup Brussels Sprouts
1 tbsp Extra Virgin Olive Oil
3 Teaspoon Juice
2 clove Garlic
3 tsp Classic Dijon Mustard
1 tbsp Basil, Fresh
2.7 grams Mint
1 tablespoon Oregano
0.25 tsp Kosher Salt
0.25 tsp Pepper, Black

Recipe Directions for Brussels Sprouts with Herb Dressing

  1. Make a paste our of the garlic cloves by first chopping them, and then making a paste in a mortar and pestle. Allow the garlic to rest 5 minutes.

  2. Wash the Brussels sprouts and then cut off the ends. Cut the sprouts into quarters. Sprinkle with 1 Tsp of the lemon juice and let rest for 5 minutes.

  3. Place 2 inches of water in pot below a steam basket. Heat the water to boiling and then lower to maintain a steady amount of steam. Steam the Brussels sprouts for 5 minutes until tender.

  4. While the water is heating, wash and dry the herbs. Then chop them very finely.

  5. Combine the oil, lemon juice, garlic, mustard, and herbs, and mix well to make a dressing. Season with salt and pepper to taste.

  6. When the Brussels sprouts are done, pour the dressing over the sprouts and serve immediately.
