A Mashed Potato Dish made with sauteed Brussels Sprouts. A serving is about 1/2 cup.

Recipe Ingredients for Brussels Colcannon

3 potato (2-1/2" dia, sphere) Potatoes, Boiled, Cooked In Skin, Flesh
2.5 cup Brussels Sprouts
3 tbsp Fat Free Sour Cream
4 tsp Peppercorns
1 tbsp Vegetable Oil Spread
2 tsp Garlic Powder

Recipe Directions for Brussels Colcannon

  1. Wash potatoes and cut into even size chunks.

  2. Boil Potatoes in water until soft enough to mash.

  3. In the mean time chop the Brussels sprouts and saute with butter spread, pepper and garlic.

  4. When potatoes are ready to mash, drain them and mash with sour cream.

  5. Add sauteed sprouts and stir to combine.

  6. Enjoy!
