Recipe Ingredients for Bruschetta Salad (Cindy)

5 medium tomatoes cut in large chunks
2 large green peppers
2 large onions
4 slices whole wheat bread
2 oz parmesan cheese
8 oz balsamic vinaigrette

Recipe Directions for Bruschetta Salad (Cindy)

  1. Several ingredients are approximations because they weren't found in the system to calculate nutrition info. See recipe directions for specifics.

  2. Also to lower fat content, use low fat or lite dressing.

  3. use rustic whole wheat bread loaf. use approx. 4-6 hand sliced pieces, desired thickness

  4. toast slices in oven until crispy, fairly dry. set aside

  5. While bread is in the oven cut veggies as described

  6. cut tomatoes into small wedges, and then cut in half

  7. use yellow peppers. slice into strips, cut in half

  8. use red onion. cut into small wedges

  9. place all veggies in a large bowl

  10. by hand, break up toasted bread into medium pieces, add to bowl

  11. pour dressing over all ingredients and stir until all is coated with dressing

  12. using vegetable grater or hand grater, slice parmesan cheese over the salad

  13. Let flavors blend for a few minutes and serve
