A light meal or snack of grilled bread with a tomato and herb topping.

Recipe Ingredients for Bruschetta

168 g bread
2 medium tomatoes
1 tsp olive oil
1 clove garlic
1 pinch basil
1 pinch salt
1 pinch pepper

Recipe Directions for Bruschetta

  1. Slice the bread (there should be enough for 4 slices) and grill on one side.

  2. Chop the tomatoes in a food processor and mix in a bowl with oil, basil, salt and pepper.

  3. When the bread has browned, take the garlic and rub it over the surface. The toasted bread fibres will wear the garlic down like a very fine grater, coating the slice.

  4. Spoon the tomato mixture over the bread and serve. Grate a few pinches of hard cheese over the top if you prefer.
