bruschetta over a sliced avacado and feta cheese sprinkled on top Servied with a olive oil brushed and toasted whole grain english muffin (or 2 small slices of whole grain bread)

Recipe Ingredients for bruschetta avacado salad with side muffing

1 whole wheat english muffin (thomas)
1 teaspoon olive oil
2 roma tomatoes
3 tablespoons cilantro
1 teaspoon basil
1/4 cup red onion
3/4 cup avacado
2 tablespoons feta cheese
1/4 teaspoon salt

Recipe Directions for bruschetta avacado salad with side muffing

  1. Bruschetta

  2. Dice Tomatoes

  3. Chop Onions, Cilantro, and Basil

  4. Toss the ingredients, add 2 tablespoons olive oil and salt (add more salt to taste if needed)

  5. Set Aside

  6. Split English Muffin, brush with remaining olive oil and broil til toasted.

  7. Closing - Slice avacado, arrange in a half fan on a plate. Place bruschetta in center of avacado fan. Sprinkle feta cheese over top. Serve with toasted English Muffin
