Recipe Ingredients for Brunch Burritos

6 cloves garlic, crushed
8 ounce mushrooms
1 1/2 cup egg beaters
4 multigrain tortillas (10")
8 oz (1 cup) fat free cheddar or fat free mozerella cheese,shredded
16 cherry tomatoes, chopped
4 ounce alfalfa sprouts

Recipe Directions for Brunch Burritos

  1. Liberally spray a medium saucepan with cooking spray. Repeat spraying while cooking as needed. Over medium heat, cook the garlic approximately 3 minutes. Stir in the mushrooms. Cook until mushrooms are tender, about 3 minutes, and set aside.

  2. In the same saucepan, scramble egg beaters. Stir in the mushrooms, and continue to scramble until firm.

  3. Transfer 1/4 of the egg mixture into each tortilla. Top each with 1/4 cup cheese, 1/4 of the cherry tomatoes and 1/4 of the sprouts. Roll tortillas, and serve.
