Recipe Ingredients for Brownies

1/2 cup egg whites
175 grams nonfat yogurt, plain (2/3 cup)
1 teaspoon vanilla extract
1/3 cup unsweetened applesauce
7/8 cup turbinado sugar
1/2 cup unsweetened cocoa powder
1/4 cup buckwheat flour
1/2 cup whole wheat flour
2 teaspoons oat bran
1 teaspoon baking soda

Recipe Directions for Brownies

  1. Preheat your oven to 350F.

  2. Take a small bundt pan and line with parchment paper.

  3. Mix the turbinado sugar with the egg whites, nonfat yogurt, applesauce and vanilla extract. Give the grains of sugar time to dissolve

  4. In another bowl, mix the dry ingredients - cocoa powder, flour, oat bran, and baking soda.

  5. Once the turbinado sugar is completely dissolved, quickly mix in the dry ingredients and stir until the ingredients are mostly well moistened. Mixture should look a little shinny.

  6. Next, put the mixture into the pan and pop in the oven.

  7. Cooking time may vary, depending on your oven. It usually takes 20 minutes at 350F.

  8. If you want it at it's best, watch it carefully, and test it by sticking a wooden toothpick near the center. If raw material comes up on the toothpick, it's not ready. If there are some moist crumbs on it, it's ready. If there is nothing on it, it may be overcooked.

  9. Once you have determined that your brownies are ready, bring them out to cool in their pan.

  10. Once they are at room temperature, seal up with plastic wrap, aluminum foil, or whatever floats your boat.
