Recipe Ingredients for Brownies, Heavenly Vegan

3/4 cups all-purpose flour
1/2 cup whole wheat pastry flour
1/3 cup unsweetened cocoa powder
2 tsp baking powder, non-aluminum
4 oz bittersweet chocolate (at least 70% cacao)
8 oz non-hydrogenated vegetable shortening or canola oil
1/2 cup water
1/3 cup organic brown sugar
1/3 cup organic cane sugar
2 tsp pure vanilla extract or vanilla bean paste
150 g (1/2 cup) plain soy yogurt
1 tbsp lemon juice, or white vinegar
1/4 tsp baking soda
2 cups powdered sugar, organic
1/2 cup unsweetened cocoa powder
1/4 cup soy creamer
1 tbsp canola oil

Recipe Directions for Brownies, Heavenly Vegan

  1. Mix your flours, 1/3 cup cocoa powder, instant espresso/coffee, and baking powder in a bowl and set aside. In a small bowl, stir together yogurt, lemon juice, 1/4 tsp baking soda and set aside.

  2. In microwave or double-boiler, melt together bittersweet chocolate and shortening/oil. To chocolate mixture, mix in water, brown and cane sugar, and vanilla until incorporated. Add yogurt mixture until just incorporated. Using a spoon, stir in flour mixture until just incorporated.

  3. In a well-greased pan (I used a glass 9"x9"), add brownie mixture and bake for 24-28 minutes. If you're using a larger pan, reduce baking time by about 5-7 minutes. Insert toothpick in center to check doneness. Toothpick should come out mostly clean, a few brownie crumbs is okay.

  4. When you take the brownies out of the oven it is very important to rap them pan on the counter about 3 or 4 times to allow the air to escape. You want to flatten them out. Allow brownies to cool for at least 30 minutes before frosting.

  5. Stir together the powdered sugar, 1/2 cup cocoa powder, canola oil, and soy creamer until smooth and glossy. When the brownies are cooled, pour frosting over brownies and put brownies in refrigerator to cool for at least two hours.

  6. Brownies are easier to cut once they've been cooled. You can serve them up cold or nuke each brownie for about 15-20 seconds.
