easy brownie with pumpkin and PB2 - you can use 1/4 cup of creamy peanut butter and one tablespoon of milk... for another 50 calories

Recipe Ingredients for brownie - pumkin, peanut butter

18 1/4 oz. box devil's food cake mix
15 oz. can pure pumpkin (Libby's is best!)
4 tablespoons PB2
4 tablespoons light soy milk

Recipe Directions for brownie - pumkin, peanut butter

  1. Preheat oven to 400 degrees. Spray a large baking pan (about 9" X 13") with nonstick spray and set aside.

  2. In a large mixing bowl, combine cake mix (if using PB2 mix it with cake mix before adding wet stuff) with pumpkin (and milk if using PB2) . Stir until completely blended. (Batter will be thick.) Spread batter into the baking pan, and smooth out the top.

  3. In a small bowl, combine peanut butter with milk. Using a butter knife or a narrow spoon handle, stir until thoroughly mixed. Swirl the peanut butter mixture over the top of the batter with the knife or spoon handle. Of course skip this step if using PB2... which is easier by far.

  4. Bake in the oven until a toothpick inserted into the center comes out clean, 20 - 25 minutes.

  5. Allow to cool, and then cut into 16 pieces. Enjoy! Those 16 pieces are pretty big... you could get away with cutting the whole thing into 24 brownies.
