Recipe Ingredients for Brownie Cockaigne

1/2 cup (1 stick) unsalted butter
4 ounces Baker's Semi-Sweet Baking Chocolate
4 large eggs
1/4 teaspoon salt
1 teaspoon vanilla
1 cup all-purpose flour
1 cup chopped pecans (if desired)

Recipe Directions for Brownie Cockaigne

  1. (if you want them chewy and moist, use a 13x9-inch pan; if cakey, use a 9x9-inch pan)

  2. Preheat oven to 350 degrees F, grease a baking pan lined with foil.

  3. In a small saucepan, melt the butter and chocolate-let cool. if you don't, your brownies will be heavy and dry.

  4. Beat the eggs and salt until light in colour and foamy in texture.

  5. Gradually add the sugar and vanilla and continue to beat until thick.

  6. With a few swift strokes stir in the cooled chocolate mixture just until combined. Even if you are using an electric mixer, switch to a wooden spoon for this.

  7. Stir in the flour until just combined.

  8. Gently stir in the chopped pecans, if desired.

  9. Scrape batter into the prepared pan. Bake about 25 minutes. Cool completely in the pan on a rack.
