Brown and wild rice salad with cranberries and pine nuts.

Recipe Ingredients for Brown and Wild Rice Salad

1/2 cup brown rice
1/2 cup wild rice
1 cup chicken broth, divided
6 green onions, chopped
1/2 cup dried cranberries
1/3 cup pine nuts, toasted
2 tablespoons fresh basil, chopped
2 tablespoons olive oil
1 tablespoon balsamic vinegar
1 tablespoon orange juice
1 tablespoon honey
1 Salt and pepper to taste

Recipe Directions for Brown and Wild Rice Salad

  1. Cook rice (in separate pots) according to manufacturer's directions. Use 1/2 cup chicken broth in place of some of the water in each batch.

  2. In a large bowl, combine the cooked rice, onions, cranberries, pine nuts and basil. In a small bowl, whisk together the oil, vinegar, orange juice, honey, salt and pepper. Pour over salad and toss to coat.
