Chewy texture, sweet nutty flavor make this satisfying. Ideal companion to autumn or winter vegetables, either roasted or stewed.

Recipe Ingredients for Brown and Wild Rice Pilaf

1 tbs. olive oil
1 onion, finely chopped
1 pinch of salt
1 cup wild rice
1 1/4 cups brown rice, long grain
3 cups vegetable broth
2 cups water

Recipe Directions for Brown and Wild Rice Pilaf

  1. Warm olive oil in a medium-sized saute pan and cook onion in it with a pinch of salt, stirring often until the onion is soft and translucent.

  2. Add the wild and brown rice and stir them with onions for couple minutes, then add the broth and water.

  3. Bring liquid to simmer, lower the heat, and cover pan tightly. Leave rice to simmer for 55 minutes, then turn off heat and let it stand, without lifting lid for another 5 minutes.

  4. Fluff rice with fork before serving.
