Recipe Ingredients for Brown Sugar Pound Cupcakes

3 cups all-purpose flour, sifted
2 tsp baking powder
1/2 tsp salt
8 oz unsalted butter, softened
5 1/4 cups light-brown sugar, packed
4 large eggs, room temperature
3/4 cup buttermilk

Recipe Directions for Brown Sugar Pound Cupcakes

  1. Preheat oven to 325.

  2. Whisk dry ingredients in large bowl

  3. Cream butter and sugar until light and fluffy. Add eggs, 1 at a time, beating after each addition.

  4. Mix any remaining wet ingredients in a bowl if needed.

  5. Add dry ingredients to butter mixture in 3 additions, alternating wet/dry, ending w/ wet. Scrape sides, divide batter, fill 2/3.

  6. Bake cupcakes until testers inserted into centres come out clean, about 20min. Let tins cool on wire racks.

  7. Cupcakes will keep, covered, for up to 3 days, unless otherwise noted.
