Recipe Ingredients for brown sugar oatmeal muffins

1 cup oats
1 cup whole wheat flour
2 teaspoons baking powder
1/2 cup all purpose flour
1/2 tsp salt
2 large eggs
3/4 cup brown sugar
3/4 cup skim milk
1/4 cup canola oil
1 tsp vanilla

Recipe Directions for brown sugar oatmeal muffins

  1. Preheat oven to 400. Grease pan or use muffin cups.

  2. Combine oats, flours, baking powder and salt and blend well.

  3. Whisk eggs and brown sugar in medium bowl; beat until smooth. Whisk in milk, canola oil (or melted butter) and vanilla. Pour over dry ingredients.

  4. Optional: add 1/4 cup raisins and/or walnuts

  5. Bake 15-20 minutes until springy to the touch.
