Steel cut oats give these muffins a little crunch. And the banana adds some sweetness. Also makes a good bread.

Recipe Ingredients for Brown Sugar Oat Banana Muffins

1 c steel cut oats
1 c whole wheat flour
1/2 c all-purpose flour
2 t baking powder
1/2 t salt
2 eggs
1/2 c brown sugar, packed
1 c bananas, smashed
3/4 c skim milk
1/4 c applesauce
1 t vanilla

Recipe Directions for Brown Sugar Oat Banana Muffins

  1. Mix oats, flours, baking powder and salt in medium sized bowl.

  2. Lightly beat eggs in 2nd bowl. Add the rest of the ingredients to the eggs until well blended.

  3. Add egg mixture to dry ingredients and mix just until blended.

  4. Put in muffin tins.

  5. Bake at 350 for 15-20 minutes
