This dish is low in fat and sodium, and high in protein, fiber, and iron.

Recipe Ingredients for Brown Rice with Veggies

1/2 cup Long Grain Brown Rice
2 clove Garlic
1 1/2 cup Diced Tomatoes, No Salt Added
4 oz Garbanzos Chick Peas
0.67 cup Ranchero Fiesta Blend
1 1tsp Olive Oil

Recipe Directions for Brown Rice with Veggies

  1. Cook rice according to the package instructions.

  2. Heat oil in sauce pan. Add chopped garlic.

  3. Saute garlic for 3-4 minutes.

  4. Microwave the Ranchero Fiesta Blend veggies according to the package instructions.

  5. Add the chick peas, tomatoes, and veggie blend to the garlic.

  6. Mix in spices to taste (I used green peppercorns, crushed red pepper, cumin, and black pepper).

  7. When rice is done, spoon rice onto a plate, then spoon the veggies over it to serve.
