Recipe Ingredients for Brown Rice Veggie Stir-Fry

4 tablespoons water
4 tablespoons reduced-sodium soy sauce
2 tablespoon olive oil
2 cup sliced zucchini
2 cup shredded cabbage
1 cup sliced fresh mushrooms
1 cup chopped onion
1 cup brown rice
1/2 cup diced fresh tomato
1/2 cup grated carrot

Recipe Directions for Brown Rice Veggie Stir-Fry

In a large skillet or wok, combine the water, soy sauce and oil. Add the zucchini, cabbage, mushrooms and onion; stir-fry for 4-5 minutes or until crisp-tender. Add the rice, tomato and carrot; stir-fry for 2-3 minutes or until heated through. Sprinkle with almonds as desired.
