Celery, green onions, garlic, and brown rice. 8.8 grams fiber and 7.4 grams protein. Low fat and low in sugar. No cholesterol. Lots of vitamins. =)

Recipe Ingredients for Brown rice and veggie dish

1 cup celery, diced
1/2 cup green onions
14 pieces baby carrots
1 cup brown rice (1/3 cup uncooked)
1/2 teaspoon garlic
1/2 teaspoon extra virgin olive oil

Recipe Directions for Brown rice and veggie dish

  1. Dice carrots, celery, and green onions. Steam for 20 minutes.

  2. TO COOK RICE: In a small sauce pan pour 1/2 cup water and 1/3 uncooked rice. Cook over medium-high heat until boiling. Reduce heat to low and cover saucepan. Let simmer for 20 minutes. Do not stir or remove top. Turn off heat and allow rice to sit in pan for at least 10 minutes with top on.

  3. In a saute pan combine steamed veggies, garlic, and olive oil. Saute for 5 minutes.

  4. Combine veggies and rice. Enjoy!
