Recipe Ingredients for Brown Rice with Tomato Sauce and Veggies

1 tsp olive oil
1 cup broccoli florets
1/4 cup sliced mushrooms
1/4 cup frozen spinach
1 cup tomato sauce
1/2 tbsp tomato paste
1/8 cup sundried tomatoes
1/4 cup fresh basil
1 cup brown rice
1 Salt, Pepper and Chili flakes to taste

Recipe Directions for Brown Rice with Tomato Sauce and Veggies

  1. Make rice.

  2. Saute broccoli and mushrooms until lightly browned in olive oil.

  3. Add in tomato sauce and paste and spinach. Slice sun-dried tomatoes and add to sauce. Add chili flakes.

  4. Let cook until vegetables are tender and sauce is slightly less watery. Add salt and pepper to taste.

  5. Turn off heat and fold in basil.

  6. Top rice with sauce and serve.
