Recipe Ingredients for Brown Rice Tomato Pilaf

3 cups brown rice, cooked
3 cups white rice, cooked
2 cups water
2 teaspoon olive oil
14 oz tomato, diced
3 carrots, diced
1 cup onion, diced
1/2 cup green pepper, diced
1/2 cup red pepper, diced
14 oz corn
1 teaspoon salt
1/4 teaspoon pepper
1 teaspoon oregano
1 teaspoon cumin
1 teaspoon chili powder
3 garlic cloves, crushed

Recipe Directions for Brown Rice Tomato Pilaf

Saute vegetables in oil until soft. Add seasonings, uncooked rice, and tomato paste. Stir until fully combined. Add canned tomatoes and water. Bring to boil, lower to simmer and cook 45 minutes or until liquid is absorbed and rice is tender. Add additional water if necessary. Add canned corn and stir.
