A healthier version of the classic California roll.

Recipe Ingredients for Brown Rice Sushi Rolls

1 cup Short Grain Brown Rice
0.65 avocado, NS as to Florida or California Avocados
7 pieces Crab Classic Leg Style
3 medium (4-1/8" long) Onions, Spring Or Scallions
3 serving Rice Vinegar
5 tsp Sugars, Granulated
5 sheet Nori

Recipe Directions for Brown Rice Sushi Rolls

Prepare sushi rice by putting three cups of water and the rice in a rice cooker and cooking. Let cool slightly. In the meantime, prepare a simple syrup with a few tablespoons of rice vinegar and 1-2 tablespoons of sugar heated in a small saucepan and boiled a few minutes then cooled. Put rice and syrup into a bowl and mix well. Assemble rice, long slivers of scallion, the crab legs and avocado slices beside sushi mat. Put about 1/2 cup of rice on each piece of nori along with a scallion piece, 1-1/2 crab pices and 2 slices of avocado. Roll. You can eat as is or refrigerate wrapped in plastic, which is the way I prefer it. Makes 5-6 rolls.
