Recipe Ingredients for Brown rice summer salad

300 g Brown Rice
2 Carrots
1/4 Cucumber
2 cups Lettuce
1 Onion
2 Spring onion
1 tomato
1/2 cup parsley
2 1/2 cups cauliflower
2 1/2 cups broccoli
2 cups green beans
1/2 cup ham
2 cups chicken breast
2 boiled eggs
1 cup mayonaise

Recipe Directions for Brown rice summer salad

  1. Boil the rice for 1hr30mins or pressure cook it for 40mins.

  2. Whilst the rice is cooking, cook the broccoli, cauliflower, green beans until tender. Also cook chicken breast.

  3. Chop everything into bitesize pieces with the exception of the egg and carrots, this you should grate. Also, the chicken breast tastes better in the salad if you tear it into chunks rather than dicing it. Add the mayonaise and allow to cool until the rice has finished cooking.

  4. Wash the rice with cold water and fluff it with your hands. Add to the rest of the engridients. Serve and enjoy.
