Recipe Ingredients for Brown Rice with Spinach, Raisins, and Pine Nuts

2 cups water
1 cup long grain brown rice
1 tablespoon finely minced fresh ginger
1/3 cup raisins or dried currants
1/3 cup toasted pine nuts
3/4 teaspoon salt, or to taste
5 ounces chopped spinach
1 dash fresh nutmeg

Recipe Directions for Brown Rice with Spinach, Raisins, and Pine Nuts

  1. Bring water to boil in pressure cooker.

  2. Add rice, ginger, 2 tablespoons of pine nuts, and salt.

  3. Lock lid in place.

  4. Over high heat, bring to high pressure.

  5. Lower the heat just enough to maintain high pressure and cook for 25 minutes.

  6. Allow the pressure to come down naturally for 10 minutes.

  7. Quick-reliease any remaining pressure.

  8. Remove the lid, tilting it away from you to allow any excess steam to escape.

  9. Stir in the spinach, remaining pine nuts, and numet (if using).

  10. Simmer, covered, until the spinach is heated, 2 to 3 minutes.
