Recipe Ingredients for Brown rice, spinach and mango salad

1 c. Short Grain Brown Rice
1/4 c. lime juice
1 t. kosher salt
1 t. ground cumin
1 t. ginger, chopped
1 clove of garlic, chopped
1 T. olive oil
1 mango
1 c. grape tomatoes, halved
1/2 c. green bell pepper, chopped
1/2 c. scallions, chopped
6 oz baby spinach

Recipe Directions for Brown rice, spinach and mango salad

  1. cook the rice according to directions, cool.

  2. combine juice and next four ingredients in a large bow, stirring well with a whisk.

  3. gradually add oil to juice mixture, stirring constantly.

  4. add rice, mango, tomatoes, onions, pepper and spinach; toss gently.
