Recipe Ingredients for Brown rice soup

1/4 cup dry brown rice
1 cup beef broth
1 1/2 cups water
2 cloves garlic
2/3 cup frozen corn
1/2 cup frozen mixed vegetables
1/3 cup diced onion
1 large egg, beaten
1 oz. romano cheese

Recipe Directions for Brown rice soup

  1. Cook the rice in a pot of water (or pre-cook to save time)

  2. Add beef broth, additional water , and diced garlic, let boil

  3. When boiling briskly, stir in beaten egg. Dump in frozen veggies (they will defrost quickly and will cool the soup enough to allow immediate consumption)

  4. Serve, grate cheese on top, eat and enjoy.

  5. A great comfort food which could easily serve 2 people
